Recipe: The Perfect Birthday Cake

2 cups Sugar
1 Stick Butter
1/2 cup Oil
4 Whole Eggs
3/4 cups Milk (Or milk alternatives)
1-2 tsp Vanilla Extract
3 cups All-Purpose Flour
2 tsp Baking Powder
1 tsp Salt
1/2 - 1 cup Sprinkles

With a large bowl, a whisk/wooden spoon/or kitchen mixer, combine a stick of butter and the sugar. Cream these together for longer than you expect with constant mixing until fluffy. Add the oil and mix to combine. One at a time, add whole eggs mixing to emulsify. Add the milk and vanilla; beat the mixture until fluffy. Place a sieve on top of the mixing bowl; add the dry ingredients: flour, salt, baking powder. Shake the sieve to aerate the dry ingredients. Mix the dry ingredients into the batter, longer than you might expect. Add the sprinkles at the last minute and just mix to combine. Prepare cupcake tins with liners or cake pans with either oil or baking spray. Distribute the batter evenly amongst the baking trays. Bake for 25-35min at 375F, until the room smells fragrant, and a toothpick pulls out of the cake cleanly. Rest on the counter for 30 minutes before removing from the pan and at least two hours before frosting. Enjoy :)
