Do you have a storefront?
We do not currently have a walk-in storefront; this is an effort we are adamantly working toward as we build capital and rapport. We sell goods for pickup from our production facility as well as delivery within the Sacramento metropolitan area. We are currently working with UPS to reduce our shipping prices.
What are your hours?
We offer delivery M-F 6pm-10pm, or on weekends by request. We are working on hiring additional employees to increase our delivery hours. Feel free to schedule a pick-up with us and we will attempt to meet your ideal timeframe.
Do you offer delivery? What are the fees of this service? Do you have a maximum delivery distance?
We do offer delivery and we have drivers who are excited to bring your baked goods directly to your hands. We charge a delivery fee of $1/mile with a minimum rate of $5 per delivery. We are currently delivering to a maximum distance of 20miles from Sacramento’s downtown; the perimeter being: Davis, Woodland, Roseville, Folsom, and Elk Grove.
What if I would like to pick up goodies from your location?
You are welcome to come to pick up your products from our kitchen. We will send a notification when your products will be at peak freshness and attempt to set a reasonable timeframe for pickup with you.
Do you offer shipping? What are the costs? How long should I expect to wait?
Our current shipping costs with UPS are $10 for a small package, $15 for a medium-sized package, and $20 for a large package. We currently cannot guarantee overnight or second-day delivery as we are trying to keep the shipping costs low. We are working with UPS to develop a business relationship that would decrease our shipping fees. All items are frozen before shipping to increase shelf life.
How far in advance do I need to order?
We request a week’s notice for all 6 and 8-inch cakes and at least 2 weeks’ notice for any larger custom cakes (and we appreciate as much as a month so that we may involve you in a tasting and consultation process). Cupcakes and cookies will usually be ready in less than a week but unlikely sooner than 3 days so that we may get you fresh product. If you have a specific date you would like the items please let us know within the ordering process so that we may meet your needs.
When can I expect my order after it is placed?
This depends on the item but typically 3-7 days for all non-custom items, and upon the requested date for any custom cake orders.
Do you have a minimum order price?
This depends on the delivery method. Currently, there is no minimum order if you would like to pick up your items from our kitchen. We will be opening a storefront as soon as possible, until then feel free to come to our production facility. Deliveries are being set up through UPS, and we are in the process of reducing our fees by working in partnership with them. Currently, there is no minimum order price for a shipped order, but there are shipping fees that apply to the size of an order (listed above). Delivery within the Sacramento metro area is available within 20 miles from downtown (Davis, Woodland, Roseville, Folsom, and Elk Grove being the perimeter) at a rate of $1 per mile (one way). Again there is no minimum order for deliveries.
What payment methods do you accept?
Currently cash, debit, and credit card payments. We are working with Square as well as additional point of sale services to expand our payment systems.
Are deposits required for large orders or cakes?
Our standard 6 or 8 inch cakes are paid for upfront; $35 and $50 respectively. Anything larger for a wedding, large gathering, etc. requires a 50% retainer upfront, and then the remainder is paid for at the time of delivery/pickup. Due to the variable nature of custom cakes it is challenging to give an estimated price for these items. Though there will be a free tasting as well as a consultation to assess the client’s desires for their special cake, and a through explanation of cost estimates and bakery expectations will be provided. How do you determine the prices of your products?
About 50% of the price of the item goes towards payment of our staff, 10% for delivery and packaging, 20% is overhead fees for the location and equipment used; and the remaining 20% are the ingredients used. Be assured, we take absolutely every opportunity to use the best quality ingredients for our products and go above and beyond with toppings, decorations, fillings, and flavor. Though it is respectively worth mentioning the largest factor in costs for baked goods is payment of our wonderful staff; which is a commitment we gladly make to benefit our hard working team.
Can I change or cancel an order after it is placed?
You may cancel all 6 and 8” cake orders with a full refund up to a week before the delivery/pickup date free of charge. After that I apologize but we’ve likely already began preparing for your cake and cannot refund you. All custom made cakes come with a 50% retainer, so feel free to cancel these if need be, but unfortunately we cannot give you back the deposit for these. As per our custom any large cakes with canceled orders are donated to local charity. All other goods sold are final at the time of purchase. If for any reason there is a problem with a purchased item please communicate with the shop and we will attempt to remediate any such production issues. However, if you are just unhappy with a product, we apologize but we cannot offer refunds for a product that does not meet flavor expectations if there is not something grossly wrong with the product.
What do you sell besides cake and cupcakes?
We also sell cookies; both classic large 4oz American style, and smaller French macaron cookie sandwiches. We offer 8 flavors of cookies and 36 flavors of macarons. In addition to this, five-yearly holidays for approximately one month I offer handcrafted French Bonbons, filled with a selection of ganaches, decorated and beautifully colored. We welcome suggestions and ideas, but for now, we are starting with a moderate inventory. Many of our items change seasonally to keep everything fresh and exciting. What’s the “shelf life” of your baked goods? How can I best care for them?
Cakes and cupcakes last around 1 week in a refrigerator before they begin to lose quality, but can last 6+ months frozen. Our cookies last 1-2 weeks before they become stale. Note that macarons actually develop a slightly more distinctive chew after the first few days, and are wonderfully aged 3-5 days after purchase. Our chocolates are all shelf-stable, and should avoid the chill of the refrigerator or they can develop a white film of cocoa butter known as “cocoa bloom”. The bonbons can last many months before perishing, but I doubt they will last more than a few weeks ;)
What if I would like to purchase an item out of the current season?
We offer all cakes and cupcakes sold out of season with an additional 30% price increase due to our kitchen’s limited inventory capacity and the difficulty of getting some ingredients out of season. Here at Redux we try hard to get all local fruits/grains/and vegetables, so it is a slight difficulty on our part to make some styles of cake out of season. We hope that this does not deter you however, we understand that some spring days you are just craving a delicious pumpkin spice cake.
How many people do your cakes serve? Do you offer different sizes?
Our 6” cakes can be divided into 8-10 modest slices, and our 8” cakes 10-16 slices. Each of our cakes is 6 delicate layers, filled with Italian buttercream as well as flavorful inclusions such as: curd, ganache, and sprinkles. We offer larger sizes for events and holidays, but this is entirely dependent on the shape of cake desired and the total number of servings. Feel free to set up a consult with our bakers.
Do you use or offer fondant?
We do offer fondant as well as marzipan. Personally, it is not an ingredient that goes on any of our standard cakes, but we understand that sometimes it is an item of request. Fondant, or otherwise known as sugarpaste, is a relatively sweet addition to the outside of a cake. It does not melt or disturb quite as easily as traditional buttercreams, especially if the cake is to be left in a warm or moist environment for several hours before serving. Our traditional French and Italian buttercreams are only moderately sweet; which pairs nicely with many of our cakes and avoids the sweetness of many American powdered sugar buttercreams. All of these are options for your special cake. We can also make cream cheese icing, whipped chocolate or white chocolate ganache, stabilized whip cream, and vegetarian-based frostings.
I have special allergy considerations, are there any cakes that can fit my needs?
All of our equipment is sanitized and washed thoroughly between each batch of products. However, we are not an allergen-free kitchen and it is impossible for us to promise that there is absolutely zero cross-reactivity for severe allergies. Some of our cakes contain peanut and almond ingredients, nearly all of our cakes contain egg, dairy, and wheat. We do however have many options for someone who would like to purchase from us with an allergy that they make us aware of. We can provide several styles of vegan cake (chocolate or almond), we can make egg-free or dairy-free desserts, and we have several gluten-free options we can make. Message us with your special considerations and we will do everything we can to attend to your needs.
What makes your products special?
Our recipes are meticulously created to optimize flavor. We purchase high-quality ingredients from local markets and farmers direct. Our frostings are not-too-sweet, and our cakes are decadent. Quarter pound cookies are filled with inclusions and are certain to melt in your mouth. Every flavor we use pairs beautifully with the ingredient combinations we utilize. We attempt to respect the wallets of every one of our customers and we only charge a reasonable expense relative to our cost of ingredients, payment for our workers, and our company overhead. We do everything possible to deliver the freshest baked goods at every instance, and we are always available for questions, comments, and praise.
